Preheat oven to 350 degrees F
Grease well a 10 x 10 inch baking pan and then line with parchment paper, leaving flaps of parchment hanging over edges of pan.
Butter and flour the parchment paper.
In a mixing bowl, whisk together the melted butter, coconut oil, and sugar. Mixture will be grainy.
Whisk in eggs and keep whisking until mixture is slightly pale, about 2 minutes.
Whisk in vanilla and coconut extracts
In a smaller bowl, whisk together the flour, baking powder, baking soda, and salt
Add dry ingredients all at once to the batter and stir until just incorporated
Fold in shredded coconut, pistachios, and chocolate chips
Pour batter into prepared pan
Bake in center of oven for about 25 minutes until blondies are golden-brown and toothpick inserted comes out clean
Remove from oven and let cool in pan on rack for at least 20 minutes before removing from pan and slicing into pieces
Makes about 20 blondies.
